1.5 cup green split peas (mix 2 cups water for every cup split peas)
8 cups (boiling) water
Ikg bacon bones (broken)
2-3 bacon rashers finely chopped (remove fat & Rhine)
2 Medium chopped onions
2 Medium chopped potatoes
I Sweet Potato chopped (equivalent size Of potatoes above)
I Medium chopped carrot
2 small cloves garlic, crushed
Salt
Cracked black pepper
Tabasco Sauce
Worcestershire Sauce
1/4 cup Corn flour
Next, follow the steps to finalize your dish and finally be able to enjoy it!
0 Mins: Bring peas and water to boil in saucepan and hold at boil for 2-3 mins. Turn
down heat and allow to sit/simmer for 1 hour.
Commence chopping all remaining ingredients as required
20 Mins: Heat 8 cups water in large pot and add garlic, onion, bacon bones all just
before water is fully boiled. Retum to boil. Allow to simmer until next step (this process
creates a •stock' effect).
45 Mins: Add chopped bacon rashers, a generous splash of Tabasco & Worcestershire
sauces and a dose of salt and cracked black pepper. Continue to simmer.
50 Mins: Add Potatoes, sweet potato and carrot. Cover and retum to the boil/simmer
until 1 hour is up.
I Hour: Add cooked peas to remaining ingredients and simmer for at least I hour. Stir
frequently and do not overheat.
1.5 2 Hours: Add com flour progressively, using sifter or (similar). Season with salt
and/or pepper as desired. Stir frequently.
2-3 Hours: Simmer and stir frequently and do not overheat.
